I don't have HUD in my car, but I've always though that there are companies that build just about any kind of software for it. If I wanted to change mine (yep, the one I don't have 
), I'd try companies like Dinan or Alpina to see if they offer anything in this respect... of course that could be a little costly.
Or, you could just go for a used setup from a totalled M5, or something. Though retrofitting will be a bitch...

I had a look through the system menu - didn't really find anything useful to be honest except one display that showed mph and kph - though the font is tiny
Incidentally i've just had my HUD replaced the other day as it was going dim randomly - all good now

From another forum:
"I did it on my e61 535D. I didn't understand yet why but M-HUD works 30 seconds starting from the ignition ON and after that works as usual. I can see RPM line with correct yellow-green-red sectors for my diesel motor, R and N gears, bottom right - small digits of speed. D gear and manual don't work. I think that first 30 sec car is trying to get information from SMG or something like that..."

Andy, contact JR from that forum and give him your file from your M5 kombi.
I think it can be done, with M5 cluster and HUD.
Edit: they already have the tracefile from M5 kombi.
