My Ride: Late 2005 M5 in Silverstone Metallic II with Full Black Leather Interior. SMG, LOGIC7, Heated Front Seats, Rear Electric Sun Blind, Comms Package, Professional Nav, TV Function, Extended Voice Control, Adaptive Headlights
As for knowing when it was built, there will be a black sticker on the US driving side suspension hub with silver writing saying the year and month it was built and the colour etc. At least that's where and what it says on UK M5's... HTH
I personally don't know of any faults as such. I've got a January 2006 M5, and it's been relatively trouble free. Had to have left and right bank idle control valves replaced recently, but apparantly that was a weird thing to go! Maybe others can clarify any common problems, but to my knowledge, there aren't any serious problems specific to 2006 M5's...

Some of the more popular performance mods include the full RPI race exhaust, RPI headers and RPI pulleys and of course an .ecu reflash. I am sure the M5 owners will chime in. Dbae's and C's Bimmer's M5s both have a ton on performance mods.

Dependant entirely on what you're after... I have had mine now for 2 years, and all I've done so far is privacy glass! I've just been enjoying the stock animal that it is!
HOWEVER!!! I am now about to start buying my rather large shopping list.
If you want to go for power then you'll need a GOOD exhaust, but be prepared for a big bill, and don't just do mufflers if you can help it. Go cat back at least. Then get the RPi Air Intake System. Just improves what is already on the car and gives good gains on power too, which are proven. Then you can get RPi Pulleys as well which help with mid range. RPi headers are a good but expensive buy too. Plenty of other things you can do too to get more power, but those are the main ones in most peoples lists I reckon! That is what I'm doing to mine at least!! Oh, and ECU remap and de-limit!!
That's a MUST!!
Other things like Supercharger conversions etc are out there too, but that is BIG BIG bucks!!
Then you've got cosmetic, so wheels, get no bigger than 20" IMO. I don't think anyone on here has bigger than that on their M5's. I'm getting 20" DPE's soon. Then carbon bits are plentiful for the M5... Upgrade the angel eyes as the pre LCI are a little on the dim side brightness wise.
I've basically just given my list of what I'm doing to mine! HAHA!!
Personal advice though... Keep the car stock for a while, and get used to how it handles and the power etc, and just ENJOY IT!! The M5 as a stock car is an amazing piece of kit. You will NOT be disappointed! I haven't refrained from modding, I've just not wanted to really as the stock car is awesome! But now, it's time to start modding!
At the end of the day, it's what you are after to get out the car, be it cosmetic or power or both... Either way, there are plenty enough people on here to help point you in some interesting directions!!

Took Delivery 10/26/2009: LOADED! E60 M5 Silverstone II/Black, Active Seats, Comfort Ventilated/Heated Seats, HUD, Brushed Aluminum Trim,
For the modding list, not in any certain order...
Exhaust (I went with the exhaust before wheels, as I can enjoy it from inside of the car.)
Drop (Probably want a drop before wheels, as the gap up front from the tires to the fender are large.)
Wheels
LED Lighting (Contact member Brabusw209amg, Cleans up and updates the look of the car)
LCI tail lights
other performance mods
