For those that want to try Windows 7 check out http://www.microsoft.com/windows7.
You can download the OS for free and install it. This version is good until I believe Mar/May 2010.

You should be able to do an upgrade but I'd recommend starting from scratch.

Don't know how techie you are but have you tried Exchange 2010 in conjunction w/ Office 2010? The new features are pretty nice.

Been meaning to, but haven't had time to set up Exchange 2010 yet.

You can upgrade from a 32 bit OS to a 32 bit OS, and from a 64 bit OS to a 64 bit OS. However, if you want to move to a 64 bit install of Windows 7 (or Vista) from a 32 bit OS, it requires a fresh install that wipes the drive clean.
I upgraded my Vista 64 bit environment to 64 bit Windows 7. Worked without any issues.
Microsoft is ambiguous about upgrading from XP to 7. I haven't personally tried it, and it may require a clean install.

Here's a short list of what I like:
- Move mailboxes between information stores w/o user downtime
- "Mute" conversations. (sick of being on an email thread? you can remove yourself from it)
- Better archiving and retention abilities (each user has an archive mailbox now)
