I'm of the opinion that if the guy drinks at all, which you said he does, he certainly will appreciate a high quality potable. Just find out what he likes and buy a very nice and/or rare example of it. You said he's not very ostentatious, so he may appreciate this as he might be of the mindset that he just can't bring himself to shell out that kind of coin for a bottle of whiskey, wine, whatever. No matter the category, you can find something really nice for $500.

Obviously, I'm nowhere in this guy's financial league. But, for example, I love XO Cognac, however I just can't get myself to spend $125-$200 for a good bottle (well a couple times maybe). However, on the few occasions I've received one as a gift, I really enjoyed the "guilt-free" factor. Plus, it's something he can share and use for special occasions.

In my office when upper mgmt is being recognized for something good....or maybe just another reason to go drinking, they get something personal. Example a nicely engraved office desk clock, or something along those lines. Also, depends on the person, like BigMike said, cuban cigars, and maybe put his name on the wooden box or have it engraved or something; but making it personal could make the difference. imho.

If he is as Conservative as you say, perhaps a donation in his name to a charity he believes in? Especially as it isn't flamboyant and is truly a gift that must be viewed of as thoughtfully considered. Just my 2 cents, spend them as you see fit!
