What exactly is involved in the "coding" part of it? What do they do at the dealer? Is it some sort of software update or something that is done through OBD2???

Full functionality comes without coding, it is just the instrument dispalys "SPORT" if you have the coding done and in manual mode with sport button pressed, S1, S2 rather than M1, M2.

Just thought of another question. Is there specific ECU part numbers for the different models? I would think the SAT ECU for a 535i would be different than say a 525d or a 550i??

Hmm - very good question.
If you do a search for ECUs for the 535, then you will see, you are offered 2 ECUs: one of the numbers match the number I put into my DIY...

I had actually checked with realoem.com and noticed the same part numbers for 2008 535i as per your diy. I sent an email to Gary @ Newport and he says that part number 61319165671 has been replaced by 61319174980. I guess they do use the same part numbers for the ecu.

Will this improve the throttle hesitation felt on (at least) the 550's? Previously the fix was the sprintboost, but I'm wondering if sport mode tightens up.
