M5 Rims/Tires
I bought a set of M5 rims and tires from a vendor in NJ who swore the tires (Front 255 40 ZR19) and (Rear 285 35 ZR19) would fit a 2007 530i sport suspension with no problem. Well this individual is wrong. The front wheels hit the struts and the rears  come very close to the body. So, I guess what I am asking from the individuals who are using M5 rims, what size tires should I mount on them.

5er Sport is correct with the tire sizes. The tires on the M5 is too wide for the regular E60. The rims work fine... just not the tires...
if you REALLY wanted to save money you can leave the rears alone they fit w/out problems, just change the front tires, like you said.. its just close. theres no problems. The only little niche about that is with 245/35/19 fronts your fronts will spin a little faster than the rears.
