As an fyi, I came from a 2007 530xi that had 19" staggered wheels. I did all the research back in the day. Happy to help.
If you want, contact member KU530. He's got 20's on his 2007 530xi.

Side question, why do people run staggered wheels? I can't find any information on it. Is it just for looks? The 535XI has a 18" staggered wheel option.

Better handling. It makes a difference. I ran 19" staggered's on my 530xi. I also installed the only xi springs made for this car (H&R) which got rid of that ugly gap. That too, helped with the handling.
Does changing the springs impact the warranty?

No it does not as long you dont have a problem resulting form the springs but the chances of that happeing are few and far between. You want staggered 20's look at mine I would even sell them if you wanted.

You can definitely do it. Which wheels are you interested in though? With forged wheels they can custom make them for your car.
