High offset pushes the wheels closer to the center of the car, narrow stance. Lower offsets pushes the wheels to the outside of the car, wider stance. That being said....

Members running M166(M5 wheels) on their NON M5 E60's are running standard ET12 front and standard ET28 rears. Some add 12mm spacers to the rears to give them an effective ET16 rear offset. Some are running M6 offset M166 rears(ET17)
Running spacers with M5 offsets or M6 offsets on the rears pushes the rears out and makes the wheels almost flush with the wheel well, giving the rear a wider more aggressive stance.
