I was looking at the 245/35/19 and 275/30/19, but I was hoping that I could get a little bit wider tire. I would rather have the M6 offsets and no spacers than the M5 offset and need a spacer to push them out.

I know a lot of people here love the General tires (and I would have them if they had not been backordered) and since you are looking at all season tires to start with they would probably be fine. If you ever plan on going to the track I would stay away from them (or probably any all season tire). I did a driving school yesterday and my buddy had almost new General Exclaims on an E46 330i ZHP and they didn't handle well at all. He was really disappointed (he picked up this car when his M3 lease ended and is saving up for a new M3 next spring). For what they cost I have been happy with how my Kumho's have done in 2 trips to the track now, but for street only driving the Generals are a better value and probably have less road noise. (and of course you can't go wrong with Pilot Sports! -- great tires just not cheap).

I run the General Exclaim UHP's on my 19" 166 reps and have nothing but positive comments about them. i just use my car to commute to and from with the occasional spirited drive though.
I also have the General Exclaim UHP's on my Z4 and they've been great.
Most will likely tell you that you need to run higher end tires but I've been very happy with these.

If you can find 285's (for a reasonable price) I'd go with them -- my 275's look a little narrow on the wheels. I'd also go with the M6 offset over the M5 offset and spacers given the choice. With spacers I effectively have a 18mm offset and wider tires would fit fine -- should be OK with the 17mm M6 offset also.
Why risk it? If go with the M5 offsets and you won't have to worry or wonder. You can throw on a 5mm spacer if you want, but you may find you won't need it. Either way, you are covered.
