Other than the shape of the center piece, what makes this wheel sporty? Is the grip diameter fatter than a standard wheel like the M-sport?

I can not confirm any change in thickness. If there is any, it is not much. All BMWs seem to have rather thick steering wheels throughout the range; this wheel doesn't feel much thinner than my old M5 wheel. However this wheel is not as thick as the M-Sport or M wheels.

This wheel is considered sport for the aesthetics of the wheel: round air bag, titanium lower trim, etc. and when you customers checked the SPORT package this is the wheel supplied from the factory.
