Looks like we've both come from e46 coupes to the e60 at the same time (I sold a 2004 330Cd to get a 2005 535d - see here) and I totally understand what you mean about the e60 feeling more detached from the road.
However, I'm gradually coming to think that in fact it's just the higher seating position and physically bigger size of the car that gives this feeling. I've yet to drive any corner or series of bends where I could say that the 330Cd used to do a better job than the 535d is doing.
All that said, I do miss the 330Cd a lot, it was just such a fun car to drive.
