You will probably get a terrific deal if you get an E60 while BMW is trying to clear them out to make room for the F10s. That's how a got a steal on my prior BMW, the 2003 E39 540i Sport.

The single purpose of dual turbos is reduced turbo lag while still getting the volume of air that a single larger turbo can generate. Think of it as if you were blowing air on a small kids pinwheel verses blowing air on a larger pinwheel. The smaller one spins up faster. The pinwheel is half of the turbo charger, the other half is the compressor.
BMW uses parallel turbos, I think Porsche uses sequential turbos and uses a smaller primary and larger secondary for a further increase in maximum output.
