Even at the highest setting I dont think its as tall as Stock.

I don't know where you got your info bu OEM E61 is the following:
17" 225/50 = 25.9"
18" 245/40 = 25.7"
19" 245/35 = 25.8"

Yours are about 1" larger OD than OEM. M5 OEM, 255/40x19", is the 27" you mention.

yeah, and that oem gap photo, well oem gap is bigger at the front than the rear so by lowering the front a little, it just brings it more snug and the rear ends up looking tighter when the wheel is made so flush. the rest is all visual effect, the rear just looks lower because of the huge rim and flush setting. plus it's not a very good comparison oem in total shade of tire/air space gap vs totally sun lit aftermarket.

I'd love to put on a better handling suspension but I don't want to loose my ground clearance. I guess that's why an AMG E55/63 wagon is pretty awesome, you get clearance when you need it and low tight handling the rest of the time, but without all wheel drive.

Do you have any idea from your install what the highest setting might be for the KW's? If they are anything like PSS9, there is a range to choose from.

Don't get me wrong, but your theory is incorrect. I was one of the first members messing around with the leveling sensors. There is 2 sensors that command the rear height that are connected one on the left lower rear arm and the other on the right rear arm. This function is to garantee always the same height depending the load of the car. To lower the rear height you have two options:

1 - Buy adjustable links

2 - Tilt the sensor.

I might ... depends on a few things with work though. If they go through I can afford a more expensive car like a GTR, and I dont have kids or anything and the GF has a 4 door car already for going out, so Im thinking of getting something ultra sporty again.

Yea after looking closer you guys might be right. Its that with the wheels pushed out flush to the fender and the slightly oversize tire (M5 specs) it fills it up fine.

Yea you have to buy all new sensors and the sensor harness. Cost is about $800.
