I have the M172 on my E61 (see My Gallery), which replaced the M166 I had on my previous 2 E60s. I say go for the M166. (I swapped on the E61 because I also have the 19" type 128 for winter and just went for rims with the same ET size (ET32) to avoid the hassle with having to swap spacers each season.) As for the tyres, you should be using the 275s on either on the rear, so the decision should just come down to which rim you prefer
Just saw this which suggests the 166 wheels are 285 tyres

Those are the standard M5 sizes, however the M5's arches provide more space than the E60. Furthermore, and importantly with your car, on the E61 you need to make sure you clear the air-suspension on the inside of the arch. You therefore need to buy the M166 wheels with the M6 (M"six"!!) offset ET17 at the rear and not the M5 offset ET28 at the rear. If you do end up with the M5 offset, you will need 10mm spacers to get the right fitment. Up front both M5 and M6 wheels are the same offset ET12.

The tyre sizes you should be using are as follows, and are those supplied with the E60 (non-M5) staggered factory supplied set-ups:
Front 245/35/R19
Rear 275/30/R19

You could get away with M5 size of 285 on the rear, but you will have rubbing up front with the M5 size of 255.

Alternatively, just get 4 front wheels with 245/35/R19, all with offset ET12. I personally prefer the staggered set-up and its probably going to be easier to sell afterwards.

So to bring it all together for you, this is what you need (for a staggered set-up):

Wheel type: M166, "M6 version"
Wheel offset front: ET12
Tyre size front: 245/35/R19
Wheel offset rear: ET17
Tyre size rear: 275/30/R19

If you get a set of M5 rims with ET28 on the back, the tyres are the same size and you will just need 10mm spacers for the rear.

Will 19" wheels work on a E61 xDrive model? I was told the biggest size on these models was 18 inch.

I've been offered a set of refurbed M5 166 wheels for ?800, seems like a reasonable price. I have a 2006 535d, do I need to fit the wheels with tire pressure monitors?

Yes, and no. It depends...
Great photo, is it from last summer?
Today I killed my rear left tyre. I do not how it was punctured and went down. Unfortunately I cut it all around so it is impossible to repair it. I was in Hungary and I drove 380 km on the small spare tyres at max 80/100 km an hour. It took 6h but I never so low consumption on the car. 6,5% like a diesel. For the first time ever the km range went above 1000 km after tanked. Not bad for 3l petrol engine. Another bad part is that I scratch a bit the rim while attempting to unlock the screws. I will post some photos tomorrow.

Sorry to hear that Marco -- hope the damage isn't too bad. Nice result on the fuel consumption though -- hopefully mine never gets that low
I had a similar situation in the Netherlands on a business trip a few years back with my first E60 -- it was so embarassing driving around for 2 days with this skinny little spare on one side and the 275 on the other... well at least the locals took great pleasure in seeing this German registered flash BMW crawling around at 80km/h
