A. 245/30 ZR 20 front, 285/25 ZR 20 rear
B. 255/30 ZR 20 front, 295/25 ZR 20 rear
what are the reasons you wud go for one or another?

Go for the 295 and 255 combo. They will not rub if you choose the rights offset for the wheels, do you know them? The choice between 295 and 285 is also dependant on the tire brand you prefer. I can recommend the Michelin Pilot Sport 2 which come in the 295 and 255 sizes.
255/35R20 and 285/30R20 might not rub buy they are the wrong sizes for an E60, the diameter of those tires is 4%-5% more than a 245/40R18 tire, which you will definetely notice in acceleration.
