Enjoy your time in Vegas. In Utah there are section of I-15 that have higher speed limit than 75. In Nevada you can get away with 10 over most of the time.
Vegas is a BMW town. There are a lot of them here. As to things to do you can always find deals if you look.

When you start seeing the hotels - we all get excited, but it is a very bad idea to speed up. I've seen quite a lot of people get pulled over on the way to Vegas. I know plenty of people who have gotten speeding tickets. I'll be going to Vegas myself in 2 weeks
Club: 'Club XS' @ Encore Hotel - pretty popping.
Lounge: 'The Chandelier' @ Cosmopolitan Hotel - pretty nice and relaxing
Buffet: Wynn Las Vegas Buffet' is pretty good. King crab legs are awesome. I've been to many different bufetts and Wynn Buffet is my favorite.
You can always 'yelp' these spots to read reviews.
At the hotel front desk, I like to slip in $20 and say 'Hi ___, would you have any complimentary upgrades for us? It is a special weekend for my gf and I'. Sandwiching $20 bill in between your License and Credit card will most likely get you a room with a better view. I always ask for a room that is not too close from the elevators and with the strip view. If you are staying at the same hotel for a few days, I personally think it's worth it. Furthermore, ask for any show coupons and restaurant coupons. Never hurts to ask them! Just a thought...

Stay at the Cosmopolitan. Newest big hotel/casino and will probably remain the newest one for 5 or more years because all new construction has stopped on other big projects. I stayed there this Monday and Tuesday and loved it. The Chandalier is an amazing bar/lounge. Three stories high and looks like....a chandalier.
For dinner, go to Andre's at the Monte Carlo. Unbelievable food.
For brunch/lunch, go to Mon Ami Gabi at the Paris. Wonderful French bistro food served right on the Las Vegas Strip.
