So, I was informed by my dealership after I had my gauge cluster replaced and car reprogrammed to the newest version that the oil temp function on the rpm gauge is no longer available and that there isn't anything they can do for me.
I have 2008 model (built april) and I have no oil temperature gauge on my car. My sister has a 2009 335xi and she has one. I am almost possitive that 2009+ e60 cars all have oil temperature gauges, so I don't know what your dealer is telling you.

I have a 2004 build with no OIL gauge, I'm surprised yours has it...

I thought only the M5 cluster had an oil temp gauge on it? Was yours an M5 cluster that the dealer replaced with a normal one?
