I'm not used to driving a high powered sports machine for too long now.
But it seems that when I brake the car can pull in the general direction the car is heading... sound right?

the car can follow the crown of the road when braking, but the steering wheels shouldn't "jump" out of your hand. Usually when the car pulls hard under braking the front tire on the same side is low on psi.

another is alignment, and if you pads/rotors are kinda warped, especially if the steering wheels kinda shakes when u brake, the rotors could be warped
if it turns out to be the rotors, you should check these out
