how do you turn off the auto-dimming mirrors?

You could probably cover the sensor (wherever it is on the mirror face) with an opaque patch. But, why would you need to do that? I find the feature unobtrusive and helpful. When I drive a car without autodim I find it annoying to have to flip it manually to minimize headlight glare from (some) following vehicles.

I don't believe there is a switch to control this feature. It's auto-dimming.

What I've done is cut a paper punch hole size piece of plastic and placed it over the sensor on the mirror. I take it off for an extended highway drive. I find the best thing to use is a piece of that plastic decal stuff that doesn't really have any adhesive, but just clings to glass. Like the little Jiffy Lube reminder stickers they put on your windshield. You can get that decal stuff at any auto parts store. Just get any cling-type sticker (like a Harley sticker) and cut a little piece out.
I think you'll find this is what you want.
