I'd prefer 235/255 front and rear set up,
I alway say 18" is the best for our E60, but 19" is for the look

I am ok, the grip level is about the same on mine. But the whole car feels more solid and more direct.
Tyres and weather are the one to blame, and i think if you can do the same speed at the same corner but in wet,
does it tell it actually gain more grip rather than lost?

my guess, the frame is not harder so it won't twist as much as before to absorb energy and the load for tires are heavier now. just like harder suspension and sway bar.

Agreed. You need to improve grip if you are modifying the handling. No matter how strong your legs are, if you dont have the right shoes then you are never gonna run as fast!
Thats why I am of the opinion to modify suspension and wheels/tyres before im proving with sway bars or strut bars etc....
