DS mode or streptonic?

Can somebody remind me ... what is the correct method to switch to "M" mode and have it stay there? if i hit a paddle, it changes to M, then changes back to D automatically after a few seconds. If i push the gear lever to the side, this engages D/S or whatever its called but keeps the car in auto mode. Do I then push a paddle whilst in D/S and it will stay in "M" until I knock the gear lever back to the side?
And then the sport button ... does this do much (e.g. is it worth pressing) if I am in manual mode using the paddles?
I've got all these extra options which I simply just don't use. For me, it's "D" and push the pedals. I'd like to play around with it a bit more

FWIW,
When I had my '06 330Xi, I found I had to use SD (or is it DS) for responsive driving. D felt sluggish by comparison, but I tended to use D in traffic as it was smoother in low speed, stop and go driving.
When I traded in the 330Xi for my 535Xi, I found the new car to be very responsive and surprisingly quick off the line in D, and for normal driving I don't feel the need to use SD like I did in the 330Xi. However, I have found that after I get rolling, say 40 mph, D can be a little sluggish when I want to step on the throttle and have the car respond quickly, so I switch to SD.
On the highway, I think SD keeps the car in 5th gear, or keeps it in 5th longer, while D will shift to 6th.

On both my wife's e46 and my e60 I always drive in DS mode. Much quicker response, especially in the e46.
and i cant feel any throttle response differences in D and DS at all. (maybe just my problem!)

I usually drive my 550 on DS mode. I only switch to steptronic mode when I decide to teach someone a lesson- this is when you want to get a full BMW power
