I can definitely feel an increase in power. Feels like the car breaths better and the throttle feels more responsive. Those are just seat-of-the-pants opinion though and unfortunately, I don't have any real data to validate the gains (aside from what Dinan claims).
MAF stands for Mass Airflow Meter also known as Air Mass Meter.

My Ride: 2006 550i Sport Package, Cold Weather Package, Premium Sound Package, Comfort Access, Xenon Headlights, Adaptive Headlight Control, Navigation System, Steptronic Transmission. Silver Gray Metallic with Gray Leather. Added Red rear reflectors. Swapped stock Style 124 wheels and Bridgestone run-flat tires for BMW Style 125 5-Double Spoke wheels, 8" x 19" front, 9.5" x 19" rear with Michelin Pilot Sport PS2 tires, 245/40YR-19 front and 275/30YR-19 rear.

There's yet more differences between the two other than the motor and price. True, you could build your engine to be as strong as the M5 (and even stronger), but unless you also do something about your suspension and steering, it just won't feel/drive like one (M5 uses variable ratio and Servotronic NOT Active steering).

I would get a 550 before sinking a lot of money into Dinan upgrades. I remember an article in Car and Driver a couple of years ago which tested a fully Dinanized M3. Nice ride but the 0-60 times were actually slower than the stock M3 they had tested previously. Also, I just don't think you get very much out of the Dinan upgrades when it comes time for resale.
I talked to my sales advisor, who is now the sales manager, last week and he said that they are getting no new allotments for the M5 at this time. His feeling was there are some bugs they are working out. I'm not sure I would want the first model year of the new M5. Better to wait a year or two.
