creaks and rattle sounds. What should we have to tolerate?
There's a DIY to fix the creaks. I had that problem with an E39 and like someone else said...it's the door seals. It's a PITA and I agree...is this something we have to tolerate in a $65K car? I guess the answer is what you're willing to put up with, in return for one of the best driving cars on the road.
I had a rattle/buzz originating from the turn signal lever in my 07 550i. Since the car was under warranty, I took it in for warranty service.
The Service Advisor drove the car with me and I pointed out the rattle/noise to him. He confirmed and said they would take care of it.
The dealership replaced the turn signal lever under warranty, rattle fixed!
It is my understanding that any rattles or creaks should be fixed if the car is still under warranty. That is the whole point of owning a luxury automobile.

It doesn't matter how much you paid for the car, the dealer should fix all these annoying rattles!

That is a steep price to pay for an X5!!!
About the rattles, have them fix it! Sometimes being a bit firm helps a bit. I had some rattles, took it down to my BMW dealer and pointed it out... only to find out that a few CD covers had fell down beneath the seat somehow and got semi-lodged hence the noise....

Fix? My point was...why should a $65K car even HAVE rattles and creaks in the first place?! We're not talking about a 1979 Ford pickup here.

My father bought a new E70 X5 1 year ago and since then the car has developed quite a few rattle sounds from the front seats, back seats and centre consol as well as a loud rattle noise from the luggage compartment. (I suspect this might be the split tailgate).
Now... my question is... how should we approach this? Am I too demanding if I require them to correct all of these minor but irritating problems?

I had a small "chirping sound" coming from the middle of my sport steering wheel.
That was fixed at the dealers with some kind of "BMW oil". Not a problem anymore!
"Classic problem" is (was) the E60 door seal squeaks.
