The ?1400 is the full cost of the individual leather. Bit of a bargain when compared to the Dakota which doesn't have a very good quality surface texture. The Individual leather is Merino leather which is vastly superior quality.

Yes, as far as I know you can have the active ventilation with the merino as it is available in perforated format. I don't have the info to hand I'm afraid so I can't tell you how much it costs to have this.

Every other colour is BMW Individual, what is possible to have perforated, but is expensive.

I am biased towards Titanium Gray II/Auburn (see pictures of my car below). Are you sure that the colors you mentioned are not just "recomended colors"? I can't imagine BMW not allowing people to order other standard E60 colors. I could believe it if you were here in the US, but in Europe it is normally very easy to order special colors, let alone other colors that are standard offerings on the E60 non-Sport.
You also mentioned that White was not offered on the Sport model in the UK, but I tried the "Build your 5 series" on BMW UK's website and Alpine White WAS one of the allowed choices for the Sport version.

Waiting to get a 535d Sport with individual and all the extras...
Well Cinnamon, which is very similar to Auburn, goes really nice with Carbon Black. It's to do with Blue and Orange being complimentary colurs.
Now I gotta decide - Carbon Black and Caramel or Jet Black and Caramel
