20 inch rims/alloys

hi all
about a year ago i bought some 20 inch rim/alloys for my e60, the guy at the shop fitted them with he sold me 245/35/20 and on the rear 275/30/20 (Falkens 452 all round).
the rear tires looked a bit small for the rim as the tire wall was sitting at an angle, if you was to look from the rear of the car so that you can see the tread of the tire, the side wall (where they manufacture has all the spec for the tire written) was angled about 30 degrees inwards and therefore the exterior lip of the rim wasnt protected, and got damaged easily.
my problem is that i had a blow out on the rear about 200miles away from home and therefore had to buy some new tires.
this local shop said that i needed to have 285/30/20 on the rear,as the original Falkens size was incorrect so i bought Dunlop Sports Maxx 285/30/20 X 2 as this guy had a used pair. put them now they are catching the on the rear arch, everytime i turn a tight corner or if there is a slight load in the rear......so i need to replace them again, but doesnt make sense to drive 200 miles to get a refund for £100.
spoke to the shop where i purchased rims and the new owner said i need 285/25/20 Falkens, but he also said that i could get away with 275/30/20, to keep my cost down (but thats not an option, as ive just had the rims refurbed)
so the question is will 285/25/20 work, without rubbing in the rear arches?
do different tires brands differ in size slightly?
this one tire guy said that i should go for 275/30/20 but not falken, go for another brand like Dunlop as the tire way doesnt sit at a angle, And he also said that going for 285/25 profile is only going to reduce the side wall down in size by 5mm, but the width is going to remain the same and that when there is a load in the vehicle it will still rub on the arch as it the width making the tire rub.is that true?
what size tires are you guys running, whom have 20 inch wheels on the e60?
im very confused now, but as some say 275/30 and other say 285/25 and i cant really be buying tires just to try out.

285/25 leaves you with a very thin wall of rubber but the tire still will be 285 wide...this can cause rubbing is the car is lowered.
275/30 has more comfort since the wall is a bit higher. Also the tire is not as wide, so should not rub...downside is that 275 can get a bit stretched is going with 10J or wider rim.

This is how my 275/30 looks. The rear rims are 20 x 10.5J . The car is lowered 30 mm...

i dont intend top lower the car, so you think the 285/25 will be ok, the falken on my rims looked more stretched than the tires on your wheels, what tires have you got

Vredestein...these came with the set..When these are done I either will go with Toyo or Falken
But I still think the 285 / 25 has very little rubber and will feel uncomfortable...

I have 285x25x20 in the rear and I have no rubbing at all. Not even when fully loaded.
I think it also depends on what ET you have. But if all parameters are correct you should have no rubbing at all, even if the car is lowered or fully loaded.
