will oil change light automatically adjust if it was reset months after a oil change or will it start over as though it was just changed?

I can't tell for sure, but my guess is that it would start over as though it was just changed. I believe the condition based servicing "calculates" the time to the next oil change by some clever method of recording how the car is being driven (stop/start, dsitance travelled etc.) and not by any sort of scientific sampling of the oil degredation.

I would therefore suggest that if you reset the Oil Change indicator a few months after the oil was changed, it will assume you have new oil and work out the next change interval from the time the reset is done. (If anyone else knows better then I am always looking to learn new things about the workings of my new baby).

I believe re-setting after an oil change will reset the next oil change to be aound 15,000 miles. The duration and how quickly the miles decrease will depend on the driving style.
