I would not recommend buying the rims and tires from a M5. The rims will fit just fine. It's just that the tires on the M5 will NOT fit onto non-M5 e60s. There have been multiple threads that mentioned this. Your best bet is to buy from Vaheh or Garry (board sponsor) the OEM 166 rims. You can go elsewhere to buy the tires. Most everyone here who has swapped out of the RFTs has Michelin PS2s but I went with Toyo Proxy T1Rs. I got a real good deal using Edge Racing based in Miami. Here is what I paid:

Rims = $1600, Tires = ~$990 - It was less than a grand. Total = ~$2600.

I almostg bought them for $2300 but Lomag told me the M5 tires won't fit the e60. Now I am back to just buying the rims off someone. Let me know what you end up doing, I may just contact BMW Newport and get them for $1600.
