I like Bioshock but I've not had enough time to complete it yet. Guitar Hero II (or if you can wait, Rock Band) is great fun too. Car games I'd go for both Test Drive Unlimited and Forza 2, they are both very different so worth getting them both. Same with Gears of War and Rainbow Six, but with Halo 3 just around the corner you might be better of waiting for that to come out.
Don't forget the Xbox Live Arcade games, I've spent more time playing some of those than I have playing retail games.
