if it has an apple logo. buy it.
it just works.
/troll.
In any case, I buy cisco only, but if you're on a budget Linksys has never failed me.
Stay away from D-Link. Personally, ive had nothing but problems with their "gamer" series of products. But, their commercial grade stuff is just phenominal.

Just bear in mind that the coverage of an AP looks like an apple with the AP at the core, remember that when placing the devices.
As for enabling security, I think that at the moment although good advice is the least of your worries.
You would be better off having a proxy server between the AP devices and the internet connection, than enabling security on each AP. This would make it much easier to administer, plus if someone replaced an AP with another one (it has been known) then you would be wide open.
the most important single piece of advice I could give you would be, KEEP YOUR BUSINESS LAN TOTALLY SEPERATE.
I dont mean VLAN it, I mean physically seperate, you're asking for trouble if you dont.

I was about to say, 23 stories with 40 rooms! Those must be big rooms! Have you tried to ask other hotels nearby what kind of setup they are using for wifi? You could probably just copy one of those setups.

My Ride: 545i Sport Package, Black/Grey. Got it July 09.
Model Year: 2004
D-Link DIR-655 Xtreme N Gigabit Router
I'm pretty sure two of these should do the trick (and then some)
Easy to use, for me at least, and reliable... I personally use a crappy version of this with draft-N (DIR-615) and am pretty happy with it... this one should blow it out of the water though!
