Mark Hopkins is more of in the san francisco style area whereas Moscone area is all new and high tech.... I still recommend you stay on the Hill....
I lived there a few block down on Taylor Street....

It will be OK in HK without a baby seat in taxis.
Itis safe and you can ask the driver to drive carefully too.
There are MTR(underground) and trams and trains so you dont need it.
But like keith say if you are in your own car must have 1, in any were in the world, I have 4 baby seats in HK for my 2 kids
have fun in HK.
