Performance car remaps ... why?

I can understand (kind of) the reason that cars like Audi, BMW, Merc etc are possible to be remapped, boosting torque and bhp. Whether it's due to extending the life of the engine, reducing time between services, allowances for poor fuel, etc etc.
But ... how can a company like Ferrari or Lamborghini possibly not squeeze every last ounce of power from their engines? Take the Ferrari F50. For around ?250 you can have it remapped ( http://www.supertuning.co.uk/ferrari-f50-remap-336.html ), boosting it from 525hp to 550 hp, and 468Nm to 500Nm. WTF is that all about? After making such a beast, that does probably 8 mpg and requires services every few thousand miles, with a team of the World's best mechanics and engineers, not have the car so finely tuned that it would be impossibly to get even an extra 1hp or 1Nm out of it?

I saw a remapped F40, that is turbocharged . The man said it reached 330-340 kmh (210 mph) .
My 'mapper' and my exhaust man often work together and on the F430 they add 50 HP .
9300 rpm instead of 8800 with the map, not bad!

Maybe, but knowing that they've nailed the handling and the weight, why hold back on power from the factory.
When somebody goes looking for a Porsche/Ferrari/etc, what's the prominent info they show on the website? bhp, 0-62 time ... all of which can be bettered with a ?300 remap, on a ?150,000 car ...
