Las Vegas Restaurant Recommendations Needed

I have to take a client to dinner tonight in Las Vegas.
What are the best restaurants there? Cost is no object. Good food and atmosphere is the name of the game.

I always liked Andre's in the Monte Carlo. It's definitely a "sleeper", but one of my favs. I've been to pretty much all of the top spots. On my most recent trip, I walked out of Fleur De Lys mid-meal, which is ironic, considering I used to go to the original in San Fran, when I lived there. It was so bad, on so many levels, even the manager couldn't argue as I made my way out without paying or leaving a tip.

Thanks everyone for the great recommendations. I ended up going to Botero at Encore yesterday and Bouchon at the Venetian tonight. Botero was quite mediocre with so so poor and poor service. Bouchon, just as it is in the Napa Valley, was amazing.
I will try out some of the recommended places on my next trip to Vegas. Most of the recommended places were on the other end of the strip from where I was staying.
I did spend a bit of time in Vegas's newest casino, the Aria at CtyCenter. Aria is beautiful and has a very different ambience than most of the other casinos -- classy and understand but very luxe. Sort of like the anti-Wynn.

I just read this thread, but for future reference I always suggest Delmonico's Steakhouse in the Venetian!
It's one of Emeril Lagasse's restaurants, and it is AWESOME!!! Give it a try some time, you WON'T be disappointed!!
