First time in FL? Orlando in a week?? You could spend the whole time a Disney World and still not see everything.
If I were you:
-At Disney, go to the Magic Kingdom and Epcot center (2 days)
-If the weather is really good check out the Disney Water Park (1 day)
-Check out Pleasure Island after dark at least once (you'll probably go more than that).
-Check out Universal Studios (Not the Islands of Adventure) (1 day)
-Drive down to Miami to see South Beach (1 day) if you can, drive further to the Keys (another day)
-Drive to Cape Canaveral to see the Kennedy Space Center (1 day and IMO well worth it)
-Check out the outlet mall
No need to see the rest of Disney, Islands of Adventure, or Seaworld unless you really want to (you can see aquariums, zoos, and rollercoasters back in NY). Bush Gardens in Tampa = Great Adventure in NJ.
