I did try it once so far.

The Auto Hold is like the electronic "handbrake", but will go off when the gas pedal is used.
The "handbrake" doesn't.

I'm so used with the auto trans that I always keep my right foot on the brake while the car is standing still.

Will not use it often, but I guess it's a "nice to have".

So how is it activated- Does one press activate the system and then each time you stop the car remains static (no creep) or do you have to press the AH button each time you stop?

One press will activate the function and give you a green light signal "AUTO H" on the dashboard.

One press again to de-activate.

It's badass in the X5. I used it a lot in their offroad course down in South Carolina. Was awesome. I'll definitely be using it this winter when I'm up north.

Are you sure it uses the handbrake? My Benz is using the regular breaks when I'm using the hold feature, and it's ultra smooth. Damn, why I'm I posting this here... Guess it's because the MB-forums are so boring...
