Is there anyway to find out from VIN or mfg date if the car has been rebuilt by BMW? I bought a 06 M5 in Dec (production date was Jan 06), everything seems fine. But i'd like to know for peace of mind.

If by rebuilt you mean if the car was a lemon buy back and then rebuilt by BMW then the seller must disclose that info to you. I think it's also on the paperwork or title but I'm not sure.
