Because of the rubber! A tire will stick to the pavement better if the rubber is warmer -- regardless of the pressure. (Although I thought only F1 used tire warmers...)

True, but I'd put it differently. A tyre will stick to the pavement better if it is operating in the specified operating temperature interval which tyre producers intended. Due to the nature of racing, the rubber, in a race, due to high friction, will be "normally" operating at temperatures way higher than normal air temperatures. So tyres, need to be brought in the temperature interval by warming up.
