I'm running 285/25 in the back and 245/30 in the front, no problems what so ever. Like you, I don't like it when the lip sticks out. There's no protection. Even without hitting potholes, the lips get bitten into. I would recommend 295/25 and 255/30 if you have room to play. That's the size I'm going with on my next set of tires.

I'd recommend KW V2 or V3's, but PSS9's are probably the cheaper route. Have you considered PSS10's with the electronic dampers?

I think I'm going to try 285/30.... Its the only way i feel comfortable. I wish I can do 295/25.. but that just doesn't leave anyroom for tire / rim. lol. I do have a lot of height to play with.. and once i get the coilovers, it'll be easier to adjust.
Do you know with the Pss9's, would i have to take off the wheel to adjust the stiffness / suspension? and would i have to take off the wheel to adjust height?
Bilstein doesn't have anything on their site..
coilovers is one of the last mods... for now.... =)

NYC is not any worse than downtown LA man. 
To adjust the shocks, you don't have to dismount the wheels... but you have to remove the trunk liner in the back and it's a PIA to reach back there. Adjusting the front shocks are easy, just pop the hood.
You don't have to dismount the wheels to adjust the height, but you'll need a big floor jack or ideally a lift.
