I am confused on...What is Offset like:
M5 offset
- Front: ET 12
- Rear: ET28
E12 is also known as 8.5?
and E28 is also known as 9.5?
Q: so if you buy a replica M5 rims..and have a 8.5 and 9.5, then this should fit your 5 series non-sport?
Q: Where in the rims can you see the offset?

google tyre bible and they have a good write up on all that stuff. in very concise terms
Offset is how far the wheel sticks out (how flush is it with the fender). More offset it is further stuck "in" and more distance is between the outer wheel and fender. Less offset is the wheel si more flush with the fender, more "pushed out" from the car.
8.5 and 9.5 refers to the wheel sizes of the front and rear on the wheels. in inches. So a common non-xi offset and wheels is something like
Front- 8.5 inch wide wheel that have 15 offsets
rear 9.5 inch wheel with a 20 offset
Something like that but the tyre bible read is very informative

+1 there is usually a stamp on the rear of the rim on one of the spokes detailing the offsets - ET XX
Especially on OEM rims ti shouldn't be too hard to find.

ET (= offset): Offset is the distance from a wheel's mounting surface on the hub to the centerline of the wheel, in millimeters. Negative offset means the mounting surface is towards the inside of the wheel. With positive offset, this surface is biased towards the outside. Typically, wider tires require more positive offset to avoid contact on the inner fender well.
