My Ride: My ex-ride: EU '08 LCI 520dA. Space Grey, Sport Seats in Black Leather/Fabric Anthracite, Sport Steering Wheel, A/C with Extended Features, Hi-Fi Speakers, Cup Holders, Cruise with Braking function, Folding Rear Seats, Xenons, Park Distance Control.
20 inchers are too much for the E60.
In my opinion 19" is max.
But use Search and see also the Parts, Accessories and Mods section.

20x8.5 et20mm fronts with 245/30/20
20x10 et25mm rears with 285/25/20
no rubbing in the rears, but the fenders were rolled in the front.
To keep the ride height the same as stock I went with the following ^^ tire sizes. Surprisingly, the 20s w/non-run-flats are actually smoother than the 18" run-flats.

The 20" wheels with 19 offset is fine. You may have to roll the rear fenders depending on your choice of tires.

My Ride: 535d Sport, carbon black, media pack, visibility pack, grey leather, heated seats, sun protection glass, voice control, Eibach ProKit, 19" 166 style wheels, e-maps ECU remap to 325hp and 640NM, top speed limiter removed
as vegastrashed has said, if you use the 245/35/20 front and 275/30/20 rear combination, these will fit without rolling the arches and not rub.
If you use 285/25/20 or 295/25/20 you'll be better of to roll the rear arches.
If you use 285/25/20 or 295/25/20 you'll be better of to roll the rear arches.
