The same way you find an M5 166 wheel with an M5 offset! You just need to specify which offset you want when ordering or check the offset on offer if its not from a dealer/shop.
To help you out, here are the offset values.

WOW got a quote for the M6 offset and it went up a bit from what I had anticipated. Is there a difference between the the concavity of the M5 and M6 rear offsets? I think I could grab a used set of M5 offsets and add a 12mm spacer for a lot less. what do you think???
I have seen the M6 offset and it looks great. Can I make the M5 offset look just as good?

I always assumed it had the same concavity on both rims, because its only 11mm difference. I think when you start looking at the "Xi" vs standard rims then they have a different concave because the offsets are that much different (over 20mm).
M5 and M6 166 rims should cost the same from a dealer -- thats the way it is in Germany at least.
If you can get a good deal on some used OEM M5 rims, then go for it as they don't come up that often. Like you wrote, M5 rims with 12mm spacers will give you the same fit.

Yes you can put 12mm spacers on M5 offset 166's and get the same look...as many members are running that exact set-up....
