Your offsets are similar to the 3 series. If you get a set of 20's meant for a 3 series it will fit. You can go as wide as 10" rims on the back.
As for tires, I believe that 'xi' models use the same size as the RWD models. 245/30R20 for the front with 285/25R20 for the rear. Drop "C's Bimmer" a PM, he's the resident 530xi expert. He had a highly modified one.

it is not recommended to do offset wheels on all wheel drive many say that it is hard on the differential once you start getting tire wear because you cannot rotate the wheels. With that said many have done it and bmw puts factory offset wheels on there x5's. But on a strictly functional analysis it would be pointless to do staggered on all wheels drive, the reason for a staggered fit is to reduce oversteer on rear drive vehicles but because yours is all wheel drive you won't have this issue of oversteer that the rear drives do. Cosmetically it does give the vehicle a much more aggressive look but again would serve no functional purpose. Just my 2 cents hope it helps.

All of us xi' guys go staggered, it's perfectly safe and won't cause any problems at all!
275 is the widest I'd go on the rear, and 245 is standard for the front.
