Can I install M5 Seats in MY '06 530I?

Yep, can be done.
I had standard seats with cloth and have changed to comfort seats with ventilation, massage and heating and memory. It's the next best single mod you can do to an e60 (after some nic rims )
You need a dealer to recode your car, and you also need a new center piece (with all seat buttons) and possibly two new door modules (they contain the memory of the seats and stuff).

Price dependant - but I think a very worthwhile mod if you don't overpay for the seats. The ventilated M5 comfort seats are amazing - plus the merino leather is much softer than the Dakota.
Good luck

Would they be able to get an exact colour match with the rest of the car interior aswell...? This is the kind of mod that if I wanted it that much, I would buy a new car. Think about how many monthly payments on a new car you could make with the cost of a mod this big.
I was a non-believer but after seeing nicke60gre and s4x4 members cars I was astounded at the fitment, match and quality and it's like new. Very impressive indeed. Nick is busy retrofitting HUD. New dashboard, HUD , windscreen, light switch, rain sensor etc. - for year's we thought it's prohibitive on this board (from a dealer's point of view) --> he's doing it for less than 1500 euros.
Above holds true if one is handy in retrofitting all this. But that's what ETK, TIS, WDS is all about !
