Thanks, a lot or calculation and work went into getting her to this state, especially with the stance.
There is some slight rubbing but only under aggressive dips at highway speeds (rear on bumper), very aggressive cornering (front on fender liner), or a steep driveway angle. I would say it rubs less than 5% of the time and when it does it isn't that rubber-to-metal sound which is most common, it is very subtle and I don't really mind it.
I am running oem M5 fenders up front which are 10mm wider than non-M fenders, they have not been touched but the rear fenders have been rolled/pulled and the rear bumper trimmed a bit.
It is a price I am willing to pay for not only have the stance but having that stance with ample rubber (245/40F and 275/35R) I really wanted some extra cushion. For my next setup I want to bump up to a 45 series up front and 40 in the rear.

I currently am running 245/40/19 on a 9.5" up front and a 275/35/19 on a 10 in the rear. I intentionally went with taller tires than the standard "aftermarket setup" of 35front and 30rear to add comfort and protection as I drive my car in the Bay Area and also mountains, these heights are also commonly found on oem high performance cars: e55, m5, etc.
My 245/40 looks very tidy on the 9.5" I was worried there would be too much stretch but the tire height-to-stretch ratio is in balance so neither stand out, rather they look surprisingly great. When viewing my car in person the tires don't come across as being large, they look appropriate for the big E61 body to which they are attached and since I am running 19s and not 20s (which visually fit e6x cars better IMO) I have some additional wheel well to fill up.
Hankook V12s and their tidy side walls are another piece to my puzzle as they visually look (and actually are) smaller yet offer the same footprint to other tires. I have ran multiple sets of V12s on each of my cars, love them!
I plan to try a 245/45/19 and 265/40/19. The narrower tire in the back will even out the stretch F-to-R and give my rear bumper some breathing room from rubbing. Traction won't be an issue as the 245/265 combo should be ample with AWD. My wagon goes 0-60 in the low 4 second range with passengers in the wet.
The wagon will ride slightly higher due to the added tire height but also from the suspension being raised to accommodate the extra meat. However I t shouldn't be too high that it looks weird. Performance will suffer with the larger diameter and unsprung mass but the car is fast enough for a daily so not a huge setback.
Of course the added rubber will be welcomed protection and comfort. Hankook makes those sizes too!
More info than you wanted but if you look at the fitment on my current and previous rides I hope they inspire confidence in my wheel/tire decision making. Gotta keep it tight!!!
