My Ride: 535d Sport, carbon black, media pack, visibility pack, grey leather, heated seats, sun protection glass, voice control, Eibach ProKit, 19" 166 style wheels, e-maps ECU remap to 325hp and 640NM, top speed limiter removed
just the tyres or including the wheels ?
The tyres really should be 225/50/17 and if you're thinking of using the E46 wheels, they will require pretty fat spacers of about 25mm to sit right.

Just tires. I wouldn't think of putting E46 rims on my E60.
By my calculation, if I went with 225/45/17 my overall diameter would be about 22.5mm smaller. Almost an inch. That's not good right? I think half an inch is the most that one can get away with. Maybe I should just get a whole new set...

Yes, it would be an inch difference roughly, as 5% in aspect ratio are what is changed when upsizing/downsizing wheels as equivalent.
Even if it does work, it would definitely not look right, your speedo would be another few miles too fast and also clock the miles quicker by the same percentage. Apart from the fact, you probably have rather prominent gaps between wheel and arch.
I, personally, would get a new set in correct size
