That way you are not altering any pixels on the original image, but rather, adding an adjustment layer on top of it.
Also, use layer masking as much as possible when making image edits.

For non-destructive image editing, never use "Image -> Adjustments", instead, use "Layer -> New Adjustment layer" ...
That way you are not altering any pixels on the original image, but rather, adding an adjustment layer on top of it.
