You should be good with the OEM M5 setup which uses 35 rear and 40 front. It's just the front 255 that wont work. So ideally i think you're safe with
245/40/19 fronts and 285/35/19 rear.

i'm using 20' donz wheels on my non sport setup, i used 245/35-20 front, 275/35-20 rear
it rides, handles and able turning at U turn like standard setup,
but the road noise is more noticeable while driving on a highway..
now i am considering to put an X5 19' wheels.. since it has the same offset as 5 series..
does anyone have try x5 wheels on E60???

if they really do have so few miles on them - especially 
Should not rub if you're running stock height on non-sport. But if you end up getting these, please do report how they fit - I'm also considering going these sizes when I get 19s.

Fit? Yes, and it's a great price, but they might rub. Especially if you are ever planning a drop.

Consider this, you're already raising the car by 0.5" running 35/30 series tires.
Now, you're looking at 40/35 that's another 0.5" ...
So now you just bumped your non-sport car up another 1.0", that's rolling 4x4
Just a suggestion, at least I wouldn't do it...
