Most people use 245/35/20 and 275/30/20 for 20 inch wheels, which return 213.033cm and 211.322cm diameter respectively.
The stock diameters are front 205cm and rear 203cm.
But for 19" inch, most people use 245/35/19 and 275/30/19(the same aspect ratio as 20"), which return 205 and 203cm diameter respectively
Does that mean I can use 245/40/19 and 275/35/19 for 19inch, which also return 213cm and 211cm (same size as the 20")?
I have a non-sport 535i.
Instead of lowering the car to reduce the wheel gap, maybe I can buy taller tire wall?

You can, but it may rub under load (like when you're carrying passengers and luggage). Ideal is 245/35/19 and 275 or 285/30/19 - it won't rub that way. Some do run 35 sidewalls in the rear though so maybe you'll be okay.

people get away with those sizes (myself included) because of rolling/cutting the fenders. we recommend those sizes for 20s because of the thicker sidewall, more rim protection. according to rolling diameter the sizes for 20s should be 245/30/20 and 275/25/20 instead.

+1 that's what I use and there has been no problem with ride quality. It handles the bumps that same as stock wheels did.

It's already high enough as it is, being on a non-sport
suspension, going with the 40/35 series will simply raise
it more.
