In one day car went from 4700 to 4300 then to 4100 then to 3800 miles left to oil change. Next day it was up to 4800. I get it changed every 7500 miles anyway.

What would cause this fluctuation?

The range in miles to service is determined based on the type of driving - it is all condition based. I suspect more highway miles cause the range change.

Sure you didn't drive backwards for 1000 miles, it's easily done you know?

The oil change algorithm is mystery and I wouldn't trust it.
