Which oil for a 540i V8?

I've always used Mobil 1 oils. Generally, a good and recommended oil for everyday use is a 5W-30 Mobil 1, but I feel like the weight/viscosity 30 is too thin for pushing high revs on a V8. Doesn't offer as much protection.

If I remember correctly 10W-60 from Castrol are recommended for the M engines, or at least they were in 2000-2005 era, which is twice as thick. Is it because the M's are powerful enough to minimize the performance loss/thick oil traction, while providing a lot of protection?

Any thoughts? 5W-30? 0W-40? Or 10W-60?

Using 5W-30 after all, LL 04. No problem.
