Are OEM wheels durable enough to use on a track?

You should be fine. OEs are made by BBS.

Don't forget to flush your brake fluid and check your pads.

If you fancy upgrading your PADS EBC Red Stuff proved only just about able to cope on the track on my last trackday, EBC Yellow stuff would be the only option for your E60 if you decide to go that route and use EBC pads, Red Stuff was pretty ok on my 3 series at the track but the extra weight of the E60 proved a little too much.
